Berry Cobbler
Berry Cobbler Note: Good use of frozen berries
2/3 C sugar
1 T cornstarch
1 C water or fruit juice, etc. (1/2 C with frozen berries)
2 pints (4 C) raspberries, blueberries, other fruit or a mixture.
Mix together in saucepan, bring to boil, and boil 1 minute.
Pour into greased baking dish, dot with butter and sprinkle with
cinnamon.
Topping:
1 C flour
1 T sugar
1 ½ t. baking powder
½ t. salt
3 T butter
Blend all in food processer and add:
½ C milk
Stir lightly till mixed. Drop spoonfuls over the hot fruit.
Bake 400 25-30 min. Good warm drizzled with cream or ½ & ½.
